Luigi’s Italian Sausage

Meat - Pork - Italian Sausage 2013-07-20 (8)



What You Need:

1          lb.        Sausage

2          tsp.      Red Pepper

2          tsp.      Fennell Seed

½         tsp.      Granulated Garlic

¼          tsp       Black Pepper

½         tsp.      Ground Oregano


What You Do:

1.  Put the Sausage in a hot pan and chop with spoon

2.  Add the seasonings and keep chopping.

3.  Get it nice and brown by turning up the heat if you need to.


That’s it!  Now you can:

·         Mix it with your eggs

·         Mix it with veggies for breakfast

·         Stuff a pepper with it and some rice and toms

·         Sprinkle it on a salad


Easy Chicken Pasta




My wife is a fantastic cook and she proved it with this dish the other

night.  She looked in the fridge and saw the pasta, the rotisserie chicken,

the pepper and wondered what she could do.  Inspiration hit and this

recipe is what came out.  The dish is delicious and easy.  I was able to take

it to work for lunch a couple of times. 


What You Will Need:

                        Cooked Pasta – as much as you want

2          TB       Butter or Oil

1                      Onion (chopped)

1                      Pepper (chopped) (green or red)

1          tsp.      Garlic (minced – I use jarred garlic)

2          TB       Flour or Cornstarch

1          c.         Chicken Broth

1          c.         Milk

1          c.         Green Peas

2-3      c.         Cooked Chicken

                        Salt and Pepper

1 ½      c.         Cheese – shredded


What You Do:

1.  Sauté the Onion and Pepper in Butter or Oil about 10 min.

2.  Add the garlic and sauté about 2 more minutes

3.  Add The flour and mix around – about 3 min.

4.  Add the Broth slowly while stirring

5.  Add the Milk slowly while stirring

6.  Add the Peas and Chicken and mix a bit

7.  Mix all of that with ½ the cheese and put in casserole dish

8.  Put the rest of the cheese on top

9.  Bake for 30 -40 min. at 350°

Basic Meatloaf – Quick and Easy





This is a basic meatloaf recipe, one you can whip together really fast and add it to your repertoire.  This is a DIY recipe – you can memorize this so you can just make it any time.


Keep in mind that you can alter the amounts of the spices and seasonings to suit your taste.  You can also add some green peppers or use fresh garlic.


What I do:  I heat a small frying pan on the stove before I make the meatloaf.  After I’ve made it, I fry up a tiny piece to see what it will taste like.  If it needs salt then I add salt.  If I’m feeling frisky I might add some chili powder and some cumin for a southwestern taste.



What You Need:

1          lb.        Ground Beef

1                      Egg

½         c.         Bread Crumbs (your choice)

1          sm.      Onion (diced) (about 1 cup)

½         c.         Salsa or Chile Sauce

1          tsp.      Oregano

½         tsp.      Basil

1          tsp.      Garlic (Granulated or whatever)

½         tsp.      Black Pepper



What You Do:

1.  Preheat the oven to 350 Degrees

2.  Take off any rings you are wearing.

3.  Mix all the ingredients together.

4.  Line a cookie sheet or lasagna dish with foil

5.  Form into a loaf and put on the foil

6.  Cook in the oven for about an hour.


Chicken Adobo

This is a real easy and flavorful dish to make that people really love.  It is a very common dish in the Philippines so I hear and I can see why.  One of those dishes that is simple but very good.  You can serve this to friends and they will want the recipe. 


What You Can Do Ahead of Time:

1. Make the marinade

2. Slice the onions and Peppers


What You Need For Marinade:

1              c.             White Wine Vinegar

1              c.             Soy Sauce

½             c.             Honey or Maple Syrup

4              cl.            Garlic Crushed

¾             tsp          Red Pepper Flakes

2              Bay         Leaves


What You Need:

1 ½         lbs         Chicken

½                            Onion (sliced)

1                             Red Pepper  (sliced)

½             c.           Chicken broth


What You Do:

1.  Add all the ingredients for marinade together

2.  Add the Chicken and Marinade for 2 hours

3.  Brown the Chicken in a sauté pan

4.  Add the Onions and Peppers and cook for about 10 minutes

5.  Add the marinade back in and simmer for about 30 minutes


French Market Meatloaf


I forget where this recipe comes from but it is not mine.  I like it a lot though and thought if would be a great way for someone to learn to make a really good meatloaf.  Usually I just throw the ingredients together but that is only because I’ve been cooking meatloaf for many, many years.  The oats can be omitted and it will be fine.  I used organic, grain-fed, free-range beef so it was pretty dense but not in a bad way at all.  We watch for the organic meats to go on sale then we snatch them up and freeze them for use at a later time.  This is an easy recipe that anyone can make and will impress both friend and foe.

 Farmhouse Meatloaf (2)

Turn oven to 375°


What you need (part 1):

1 med. Onion diced

1  Green Pepper – diced

2 cl. Garlic

2 t. salt

1 t. pepper

½ t thyme

½ t oregano


What you need (part 2):Farmhouse Meatloaf (3)

2 lb. Ground Beef

½ c. beef broth

½ c. tomato sauce

¼ c. oats

1 egg – beaten


What you do:


1. Cook the vegetables on med. High for 10 min.

2. Add the vegetables to the part 2 stuff and mix all together

3. Form a loaf on a foil-lined sheet

4. Bake for 50 min.


Here is a more organized way of looking at it:


1 med. Onion – diced

1 Green Pepper – diced

2 cl. Garlic

2 tsp. salt

1 tsp. Black Pepper

½ tsp. Thyme

½ tsp. Oregano


Cook on medium high for 10 min.

2 lbs. Ground Beef

½ c. Beef Broth

½ c. Tomato Sauce

¼ c. Breadcrumbs

1 egg- – beaten




Mix together then add vegetables and mix

Form into a loaf on a foil-lined sheet

Bake at 375° for 50 min.

 Farmhouse Meatloaf (4)

Quick Greek Dressing

What You’ll Need:
  • 3/4 cupolive oil Greek Salad
  • 1/3 cupfresh lemon juice
  • 1 tablespoondried oregano
  • 1/2 teaspoongarlic powder
  • 1/2 teaspoonsalt
  • 1/4 teaspoonblack pepper
What To Do:
  1. In a small bowl, combine all ingredients; mix well. Serve, or cover and refrigerate until ready to serve.

Makes 1 cup dressing.
